Chicken Pasta/Rice

Chicken Pasta

Start to finish time 30 minutes to 60 minutes depending on rice or pasta

What you will need

  • 1 pound chicken with fat removed

  • 1 large or 2 small zucchini

  • 2 yellow squash

  • 2-3 tomatoes

  • 1 package fresh mushrooms

  • 4 servings of angel hair pasta or long grain brown rice

  • Start in enough time to ensure done by time chicken sauce is done

What to do

  • Brown chicken in healthy oil such as olive oil

  • While chicken is cooking cut up veggies

  • Once chicken is browned add the zucchini, squash, and mushrooms and allow to cook for about 7-10 minutes

  • Add tomatoes and cook until the tomatoes make a sauce

  • Add any dried herbs to the chicken and sauce at any time. I personally add when cooking the meat and right after I add the tomatoes.

This is a healthy and easy dish to make. Makes 4 servings and is great warmed up. I usually use rice instead of pasta due to a gluten sensitivity unless I make my own pasta.
